patu cooks with what the season hands over: wild greens off the serra, whatever the garden is ready to part with, and what has been quietly fermenting in jars since the last cold snap. everything is plant-based. nothing is fixed.
nothing leaves here that could still become something. peels turn to vinegar, trim to stock, the bottom of the wine press to miso. the closed loop isn't a rule we keep. it's just the way the cooking makes sense.
there are no opening hours. we open when there is a reason to: a harvest, an ingredient at its peak, a group that wants to learn. you come when it matters.
